Cast Iron Cooking

If you are lucky enough to have enjoyed precious moments with your grandmother in the village or her mountain home, you probably also have fond memories of her distinctively delicious meals. You may even remember heart-warming details, such as her favourite cast iron pan placed over the hobs or wood coals so she can make you honeyed flat bread, or her cast iron pot in the oven, filling the house with sumptuous smells of stewed lamb and melt-in-your-mouth potatoes.

Cast iron cookware is made from a special type of iron with a high carbon content. This explains why they are typically heavier than other cookware ranges but also… a lot more durable. In fact, with proper care and maintenance, your cast iron cookware will last for many decades, and can even be passed down from generation to generation.

 

How to clean and care for your cast iron cookware

In order to maintain these unique cookware items, all you need to do is understand their core needs. Show them love… and they will love you right back for a whole lifetime.

Natural non-stick coating: Cast iron utensils do not have synthetic and potentially harmful non-stick coating, but they undergo an initial treatment before they hit the market, with a vegetable oil patina.

This creates a natural non-stick coating which must be renewed and cared for by its next owner. Before or after use, coat your cast iron cookware with a little sunflower oil (1 tbsp.), wipe off any excess and then burn the oil over high heat or in the oven at a high temperature. Repeat this process at least three times during your first uses in order to develop and enhance a lasting non-stick coating.

Cleaning: After cooking, wash your cookware with a sponge and warm (not hot) water, using a soft soap or liquid detergent. Never use harsh detergents, cleaning agents, bleach, chlorine or abrasives such as sponge wires, powders or steel brushes, as they will damage the non-stick coating you have so carefully developed.

After washing:Wipe off any remaining water after washing in order to avoid gradual rusting, using a cloth or kitchen towel. In order to keep your surface in excellent condition, coat your utencil inside and outside as well as across the lip, with a good quality vegetable oil, using a soft brush or tissue.
